| Under Construction Join Date: Jul 2006 Location: NorthWestish Posts: 54 Rep Power: ![]() | Try this one! Peel your sweet tatty then cut it into about small cubes of about 1cm. Heat some olive oil in a wok or non stick frying pan and add the sweet tatty. Keep stirring then around or they will burn pretty quickly. Once they have started to go brown add a little water and wet fry them until the water has evaporated and they start 'oil' frying again. This should take a couple of minutes. Sweet potatoes cook quite quickly. Next add as many egg whites as you like with one egg yolk and scramble it all together. Season as you prefer. There is still a bite to the potatoes. Really quick and pretty scrummy. Altenatively you can add turkey mince that has been browned off with very finely chopped onions and seasoned (try a mixed spice it works really well) in a seperate pan. Optional to add some toasted pine nuts. Sweet Tatty Mash Peel and cut into cubes. Boil until soft. Chop up a good hand full of fresh coriander Drain the water off the sweet tats and put them back in the pan and mash them up (i just whizz them with one of them stick blender thingies) Add the coriander, a dash of olive oil and season to taste. We have ours with turkey sausages and its ace! Or try it with grilled fish or chicken. Enjoy |
