not 100% sure about this, so don't blame me if it goes wrong.

makes approx 8 pancakes.
200g flour (use wholemeal if you like)
pinch of salt (optional)
4 eggs
300ml milk
300ml water
100g instantised whey (if not instantised mix it up in a blender with the water first)

Add the milk and water to the eggs and flour gradually, depending on the size of the eggs etc you may need slightly less or more water/milk.

Work towards a runny consistency, similar to single/double cream.

Leave the mixture to stand for a couple of hour before cooking.

You could try substituting 1 egg for a bit more milk and adding half a teaspoon of bicarbonate of sodium. Should resoulve the rubbernes and add a bit of air into them.

Though if you're not going to eat the possible not-so-great results it might be a wasteful experiment.

If I'm not working this weekend, I'm determined to figure out a good recipe.

I use 3 egg whites and 2 scoops of choc whey protein mixed up in the belnder.

Fry both sides until golden brown with a tsp of olive oiul or some low cal spray.

It's an aquired taste, but you can add a dessert spoon pf honey or sugar free jam or some sugar free peanut butter.

Taste a hell of alot better
