heat destroying protein problem

if you steam fish and chicken how much protein will be lost? as i read that heat destroys protien and your better of eating a vegtarian diet as eating meat or fish yields little protein because of the heating process

Good question

It depends on the type of protien as to how much is denatured when heated. Meat, fish and eggs all yeild large amounts of protien after cooking.

Whey protien is different, it denatures at pretty low temperatures.

Heating will not affect the absorbancy of most proteins at all, at least not decrease it.

Cooking eggs increases the absorbancy from 70% to 100%, I'm sure meat/fish are the same.


Heating whey/casein may change the tertiary structure of the molecule but the amino acids in there will still be the same. Dont sweat it.
