| Join Date: Dec 2003 Posts: 0 Rep Power: ![]() | OK, I can't stand tuna - it's like cat food, but this makes it pretty palatable. 400g tuna, canned in water 400g Tinned chopped tomatoes 2 garlic cloves crushed to a paste As many chillies as you want, I use 2 chipotle, 2 Indian and 2 cascabel (all dried and rehydrated in hot water for about 20mins) crush these to a paste and add to the garlic 1 Large red onion finely chopped into small dice 1 Tbsp olive oil ========== * Heat oil in a large saucepan and when hot add the onion and cook until just caramelised * Add the garlic / chilli mixture and quickly stir fry for a couple of minutes, do not let the garlic or chilli burn * Turn the heat down to it's lowest setting and add the tomatoes, stir to combine and let simmer gently until reduced and thick (stir occasionaly) * When the sauce is nice and thick add the drained tuna to the pan, stir gently to combine, turn off the heat and put the lid on * Leave for about 5 mins for all the flavours to develop and serve. ============= I don't know what the nutritional values are of this but I don't think they're too bad, there's protein from the tuna, carbs from the tomatoes, a little bit of good fat, quercitin from the onions and garlic and capsaicin from the chillies. |
