Default update and recommendations

Ectomorph here, I have worked on and off over the years, but really stuck to the diet this time. I have only weighed over 180lbs twice ever, once from working out 8 months straight and the other time was a cruise and just kept eating. I have now worked out only 7 weeks and have gained 25lbs!! Up to 198, and maybe its because I'm 28 and my metabolism is slowing down, but I was content with the gains.

My question is whether I should continue the full body workout. My strength gains are declining everyweek and I was thinking about changing it up before I completely plateau.

I was thinking one of the following

Option 1

Monday Chest
Tuesday Back
Wed Off
Thurs Shoulders and Arms
Friday Legs
Sat Off
Sun Off

And if I did this workout should I do 3 excercises at 4 sets or 4 excercises and 3 sets?

Option 2

Monday Chest and Back
Tuesday Off
Wednesday Shoulders and arms
Thursday Off
Friday Legs
Sat Off
Sunday Off

Option 3

Monday Chest and Tris
Tuesday Back and Bis
Wednesday Off
Thursday Shoulders and abs?
Friday Legs
Sat OFF
Sun OFF

I'd rather go to the gym 3 days a week, but if four is necessary, so be it. I would think option 3 would be best, but please which one should I do? Or another routine?

I would do option 3.Its a simple plan.You will need to change things from time to time.We all do.7 weeks into a full body routine and you are losing strength?How many days are you training and how many days are you resting?
