You cannot change how much they grow by altering your workout. 10 sets or 1 set, you will grow the same amount after recovery. The only difference between those workout styles is the length of recovery. You don't grow until it is complete and your muscle is back at 100%. Lifting weight destroys muscle so the recovery period could be nearly a week with 10 sets, or it could be 1 day with 1 set. With that reasoning you will grow 3 times faster by working a muscle 3 times a week with 1 set. HST stands for hypertrophy specific training.
