To vouch for 1 exercise in particular standing Military Press is the Daddy.

Could someone give me a diagram to "Side Laterals" and "Arnold Press" as im not sure which exercise these names belong to thanks.

Default shoulders

Stick with seated dumbell press as your main exercise. I would avoid behind the neck press its such an un-natural movement. Chuck in barbell upright rows and dumbell lateral raise and then finish them off with some rear delt work. If you have a decent rear delt machine go with that otherwise bent over laterals will do it.
