It has been proven that during training that your muscles reach a point of being pumped and then if you push the muscle any harder you lose that pump, this then has a catabolic effect on your muscle tissue. I say stop as soon as you reach a total pump and not more.

Catabolic = Losing muscle
Anabolic = Gaining muscle

its a little hard to say on this much info...how many days consecutive are you lifting?, how many sets?, how many reps/set? how much rest are you getting at night? what is your diet like?...sorry to barrage you with questions, but all these things may impact the issue your having...

It sounds like you are not eating enough good clean carbs to keep your workout intensity up and prolong your pump, in the absence of adequate cals your muscles will become flat.

Sounds like a case of glycogen depletion - as FP/Jay said, try upping your clean carbs, and see if the problem goes away.
