Best bet is to hit a high protein diet as hard as you can. After 2pm do not eat any more carbs, what you want to do is ensure that you have a further 3 or 4 meals after this with just protein.
My cutting diet is basically in the morning 2 meals with:
White fish / Tuna with 65g of brown rice.
After 12pm I do not touch carbs and eat the following through the day:
Tins of tuna
White fish
Red fish during weekends
Chicken Breasts
Turkey breasts
Steak (LEAN)
Mince meat (Extra LEAN)
These are the staples of a good cutting diet. Having lost so much weight over the past 18 months i have excess skin.
